Recipe
Salad with feta, parsley and mint
When purchasing parsley look for the flat-leafed variety. This is the true Mediterranean parsley and is far superior in flavour. The curly-leafed is often used as a garnish because of its ability to stay fresh looking longer. Use mint leaves according to your taste and the size of the leaves. There are several varieties of mint. Spearmint, with young, tender leaves are best to be used in salads.
2 cups ready to use couscous
250 g feta cheese
20 mint leaves
2 cups flat-leafed parsley
1 garlic clove, minced
4 tomatoes,
10 Tbsp. olive oil
lemon juice
salt
pepper
Garnish: slices of lemon and mint
Prepare the instant couscous according to package instructions.
Cut the feta into 0,5 inch cubes. Cut the mint leaves and parsley. Crush 1 garlic clove. Chop the tomatoes into small cubes. In a large bowl, combine all the ingredients and add 10 tbsp. olive oil and some lemon juice.
Mix with the warm couscous and season to taste with salt and pepper.
Leave to rest for at least half an hour. Garnish with slice of lemon and some mint leaves.
Serves 4
