One thing you probably thought when you were moving to the Netherlands is “Well, one thing I know I won’t be doing is taking a local cooking course.” After all, when checking out the restaurant guides in other major cities, the list for Dutch restaurants is short – to say the least. The aim of the compilers of this book has been to present you with recipes that have been passed on from our ancestors but that have been adapted to modern times, in other words; with less fat, fresher vegetables and more vegetarian variations – or so the authors say themselves.
So, if you are in the mood for learning some local cooking that will make you feel that you are at your mother’s kitchen table after she became more informed on the latest dos and don’ts in nutrition, try out some Bare Buttocks in the Field, Amsterdam Houses, or Hot Lightning – and find out that there is more to Dutch cooking than potatoes, milk and cheese (though that’s in there too, check out page 23; hutspot).
